If you’ve ever wanted to learn how to bake artisan-style sourdough bread, this workshop is for you!  Nicole will demystify the process of working with wild yeast and guide you through each step of creating a loaf that’s crisp on the outside, tender on the inside, and full of complex flavor. Class will cover everything from creating and maintaining a healthy starter (the cornerstone of sourdough) to stretching and folding techniques, proofing, shaping, and baking artisan sourdough bread.  Participants can create the beginnings of a starter in class if they wish.

  • Learn how to feed, maintain, and troubleshoot your sourdough starter so it thrives.

  • Understand hydration, gluten development, and the magic of long fermentation.

  • Practice folding, shaping, and scoring to create beautiful artisan loaves.

  • Explore methods for achieving that signature crackling crust and airy crumb.

  • Get ideas for using sourdough discard in a variety of recipes!

By the end of class, you’ll have the confidence to bake sourdough bread at home, plus guests can create the beginnings of a starter to take home and continue their sourdough journey.
