Summer Fruit Ice Cream

Summer wouldn’t be summer without juicy fresh fruit or cold creamy ice cream. This quick, simple recipe can be made with fresh berries (strawberries are amazing here), peaches, cherries, figs, even plums. Bonus - no eggs and no cooking required!

Follow the base recipe, add your favorite fruit, chill the mixture and then pour into your ice cream maker. That’s it! That’s all you need to enjoy the bliss of homemade fresh fruit ice cream all summer long.

WHAT YOU NEED:

  • 3/4 cup whole milk

  • 2/3 cup sugar (you can adjust this +/- based on the sweetness of your fruit)

  • pinch of salt

  • 1 1/2 cups heavy cream

  • 1 1/2 teaspoons vanilla extract

  • About 1 1/2 cups of fresh fruit

WHAT YOU DO:

  1. Chop your fruit into small pieces, or put in a food processor and pulse until roughly or finely chopped (your preference).

  2. Put the sugar, salt, and milk in a medium bowl and whisk until sugar is dissolved (I like to use a hand mixer for this).

  3. Stir in the heavy cream, vanilla, and fruit until well combined. Cover and refrigerate, at least 3-4 hours (overnight is best).

  4. Pour chilled mixture into your ice cream maker and follow instructions to churn. I use the Cuisinart Automatic Ice Cream Maker, which takes about 20 minutes to churn and doesn’t require salt. Store churned ice cream in a freezer safe container (not in the churn bowl, you’ll never get it out!).

  5. Enjoy!
