Let Them Eat (this super easy) Cake!
Memorial Weekend post-pandemic has us wanting to do anything other thank cook! Jump on a plane, hop in the car, go to an outdoor concert, see a movie, gather with friends and family…anything other than staying home. It’s high time for a great big slice of normal! Since you might need to eat, though, how about making this super easy one pan chocolate cake? It’s rich, tender, perfect to whip up with your kiddos, and it's even vegan! Ideally you'll want to make this in an 8x8 pan, but use the closest thing you can find (which is what I did).
Here’s what you need:
Flour - cocoa powder - baking soda - salt - sugar - vegetable oil - water - apple cider vingar - vanilla - optional: chocolate chips -
Here’s what you do:
Mix 1 1/4 cups flour with 1/3 cup cocoa powder, 3/4 tsp. baking soda, 1/2 tsp. salt and 1 cup sugar in your pan until well combined (whisk or use a fork to break up any clumps). Stir in 1 cup water, 1/3 cup vegetable oil and 1 tsp. each vanilla and apple cider (or white) vinegar. Mix until batter is smooth and uniform in color. You can sprinkle chocolate chips on top if you'd like, then bake at 325 degrees F for about 30-35 minutes, or until a cake tester inserted into center of cake comes out with a few crumbs attached.
Let it cool slightly (warm cake is always a treat), or let it cool completely and serve with vanilla ice cream.
